PREPARATION :

- Mix it very little by little until you obtain a homogeneous and supple dough (add water if necessary).
- Film the dough and let it rest for 1 hour in the fridge. Peel and seed the apples.
- Cut them into thin strips and mix them with the lemon juice and zest in a bowl.
- In a bowl, combine the sugar , flour , cornstarch , salt , vanilla powder and cinnamon .
- Distribute the mixture over the apples and mix gently.
- Add the apple juice and soak the apple slices in this mixture.
- Preheat the oven to 180 ° (th.7).
- Line a buttered and floured mold of about 20 cm with the dough.
- Line the pie shell with the apple mixture and sprinkle with pieces of butter.
- Cut the stars with a cookie cutter from the remaining dough.
- Distribute the stars over the filling and gently press the stars to the edge of the mold or to the other stars to hold them together.
- Brush the stars gently with egg yolk.
- Bake for about 35 minutes. Watch the pie and cover it with a sheet of aluminum foil if it browns too quickly.
