How to make a good coconut milk soup?

Every year, soups become our BFFs again from October. By the fireside , in bed or with your partner, coconut soup is a simple recipe to make, diet and above all delicious thanks to Thai flavors .

Cooking time : 25 min

For 4 people

PREPARATION :

  • Place the coconut oil , garlic , ginger , the white part of the scallions and the peppers in a sauté pan heated to medium heat and cook for 5 minutes without stopping stirring.

  • Add the small spelled and cook for a few minutes.

  • Pour 800 ml of water , cover and cook for 15 minutes.

  • Add the coconut milk , lime juice , baby spinach and cook for 5 minutes longer. Taste and salt if necessary.

  • Serve the soup in bowls and sprinkle with the green of the scallions .
