The sauce
Roast the peppers in the oven for 30 min at 200 ° C then peel and cut them.
Heat the oil over medium heat in a saucepan, add the sliced onions and cook over low heat until translucent. Add the garlic and cook until soft, then add the tomato paste. Cook for 1 minute.
Then add the spices and cook for 2 minutes more, then pour 30 ml of white wine and reduce the sauce by half. Finally, add the tomato pulp and cook until the water evaporates.

The dish

Then add the sliced zucchini , the chimichurri and the spinach . Sauté until the spinach is just cooked through.
Transfer to a serving platter, add the sauce and make 4 holes to crack the eggs, salt and pepper the tops of the eggs then bake for about 3 minutes or until the egg whites are barely taken.
When cooked, garnish with crumbled feta , chickpea popcorn and sumac, place the fresh herbs on the dish and serve with the half baguette cut in half and toasted.
