Winter's mozzarella tomato is this ultra refreshing and comforting salad that combines endives , lentils and Morteau sausages .

Preparation:
Rinse the lentils in cold water and place them in a pot with the unsalted water . Bring to a boil and cook, covered, for 20 to 25 minutes. Drain. Keep warm.
Cut the Morteau sausages into slices 2 cm thick. Slice the shallot .
In a frying pan, brown the minced shallot with the butter then add the Morteau sausage . Keep warm.
In a saucepan, melt the grated Comté with the milk and cream over low heat . Mix gently. Season with a turn of freshly ground pepper and a pinch of nutmeg .
Rinse your Pearls , remove the heels, cut them in 4 lengthwise and chop them finely.
In a salad bowl, mix your Pearls with the Morteau sausage and the still warm lentils , add the Comté sauce . It's ready, you can taste!
