Preparation:
Preheat the oven to 200 °.
Coat the guinea fowl with olive oil and place in a casserole ovenproof (ideally a cast iron pan). Season with salt and pepper on all sides.
Peel and cut the onion into pieces. Cut the head of garlic in 2. Place everything in the casserole dish along with the thyme and bay leaf .
Drizzle with the chicken broth .
Cover and bake for 40 minutes in the oven at 200 °.
Cut the apples in 2, remove the cores with a Parisian apple spoon, then cut into quarters.
Place the chestnuts and apple quarters in the casserole dish then continue cooking for 10 to 15 minutes.
To taste out of the oven, sprinkle generously with the slightly sweet sauce.
