Frozen clementines from Corsica
Preparation: 20 min – deep-freeze: 4h
For 6 persons
Recipe:
Step 1
Cut off the hat of the Corsican clementines. Remove the fruit inside the shells and hat with a small saw knife without damaging the rind.
Place the shells and their hats in the freezer.
Step 2
Cut up the quarters collected in pieces and keep the juice. Place them in deep-freeze bags in the freezer, nice and flat, for at least 4 hours.
Step 3
When the pieces are frozen, break them and mix with the glazed sugar until they are frosty. Then add the egg white and mix again.
Step 4
Fill the Corsican Clementine shells with the frosty mixture and set aside in the freezer. Take them out 15 minutes before serving and place the frosted hats on top
