For 3 to 4 people
Preparation:
Wash and peel the potatoes. Cut into slices 2cm thick, ideally, take them in a cookie cutter 4cm in diameter for even cooking. Immerse the potatoes in water and milk and cook them for 20 minutes at a simmer.
Peel and finely slice the onions. In a pan, heat the oil and brown the chopped onions . When they become translucent, add the smoked bacon matches. Stir regularly with a wooden spoon until the onions and bacon are golden brown.
Deglaze the pan with the white wine and continue cooking for 5 minutes.
Preheat the oven in the "grill" position. Cut the reblochon into long strips. Butter a large baking dish. Divide are potatoes, onions and browned bacon with white wine. Add mushroom sauce with summer truffles Artisan Truffle. Spread the slices of reblochon on it. Bake the tartiflette for 35 minutes, until the reblochon forms a golden brown crust.
Take the tartiflette out of the oven then grate the fresh truffle shavings . Serve it hot, accompanied by a green salad and a glass of white wine from Savoie.
