Like at a Japanese restaurant but with the satisfaction of doing it in addition, this spiced beef tataki will make you salivate.

PREPARATION:
For the marinade:
Mix the coriander (keep 2 sprigs) with all the other ingredients.
Pour into a freezer bag and set aside in the fridge.
For the meat:
Fill a bowl with cold water with ice cubes .
Heat your pan over high heat with a drizzle of oil .
Sear the meat on all sides - allow 5 minutes total cooking time. It should be cooked and golden on the outside, but raw on the inside. Immerse it in ice water for 5 minutes to stop cooking.
Drain it, then transfer it to a deep dish and sprinkle with the marinade.
Let stand in the fridge for at least 1 hour (12 hours is even better!).
For the sauce:
Take the meat out of the marinade and pour it into a saucepan.
Reduce heat to low - add a little water if the sauce is too thick.
Let cool, then add a few cilantro leaves .
Cut the meat into thin slices, then drizzle with 1 tablespoon of pineapple sauce . You can also pour the sauce into a small bowl and dip the meat slices in it .
My little extra: For even more freshness, I sometimes replace the lemongrass in the marinade with fresh ginger !
