PREPARATION
- For the shortbread . Mix the egg yolks and the sugar with a mixer , add the salt. Stir in the softened butter, add the flour and baking powder. Let the dough rest for at least 3 hours.
- For the creamy hazelnut. Boil the milk with the cream and grated lime zest . In a bowl, mix the egg yolks with the sugar until they turn white, then add the ground hazelnuts and mix well. Pour the hot milk over this preparation, stirring constantly. Return to the saucepan and cook for 5 to 8 minutes over low heat, stirring as for pastry cream . Remove from the heat and place in another cold container to stop the cooking.
- For the pie . Roll out the shortbread dough with a rolling pin and form a circle about 32 cm in diameter. Place it on a baking sheet and bake at 160 ° for 18 minutes. Once cooked, leave the dough to cool and garnish it with lime cream using a pastry bag, avoiding any on the outer edges. Cut the strawberries in half and mount them in a rosette on the dough. Sprinkle with icing sugar using a small sieve.
