Do you have a passion for filled pita breads like at Ace du Fallafel or at Miznon ? That's good, here is the recipe to concoct an exquisite sandwich. The extra thing that makes all the difference? The banana hummus that gives the magical taste that everyone will enjoy.
Preparation: 35 minutes

For 4 people
PREPARATION:
To make the banana hummus:
Peel the banana , cut it into pieces and place them in the bowl of the blender.
Add the previously drained chickpeas , the sesame puree , the juice of the previously squeezed lemon , the olive oil and 2 peeled garlic cloves .
Blend for 20 seconds until the preparation is smooth. Season with salt and pepper , then refrigerate.
To make the keuftés:
Peel and chop the onion and the remaining 2 garlic cloves , then place them in a container.
Chop 5 sprigs of flat- leaf parsley and add to the preparation.
Add the cumin powder and the minced meat .
Mix everything with your hands then make 8 keuftés .
Then brown them for 10 minutes in a drizzle of olive oil .
To make the salad:
Peel and cut the banana and red onion into small cubes. Place in a container.
Cut the tomatoes into identical size cubes and mix everything together. Season with a drizzle of olive oil , the juice of the previously squeezed lime , salt and pepper .
To make the pitas:
Toast the pita breads then slice them in half lengthwise, without going all the way.
Spread the inside with banana hummus then add a handful of baby spinach .
Place 2 keuftés in each pita and then sprinkle with the tomato and banana salad .
Add chopped mint and serve immediately.
