Caramelize the pecans with maple syrup for a crunchy touch. Yum.
Preheat the oven to 200 degrees. Wash and peel the sweet potatoes , cut them into slices or large cubes. Spread the pieces on a baking dish previously covered with baking paper. Pour a drizzle of olive oil on top and season them with a little paprika, salt & pepper. Cook for 25 minutes.
In a bowl, mix the pecans with the maple syrup . Caramelize in a hot pan until the maple syrup is completely dissolved. Let the caramelized pecans sit on a sheet of baking paper for a few minutes.
Cut the feta into small pieces and slices of Angys® pear, then start to prepare the plates. Place a bed of lamb 's lettuce at the bottom of each plate. Add the pieces of feta , the roasted sweet potato slices, the pear slices, a handful of caramelized pecans and fresh pomegranate in each one.
