What if we contradicted the boring reputation of broccoli by glamorizing it with a foodporn , healthy and sexy recipe for the aperitif? It's up to you to play with a batch of 20 chewable croquettes.
Recipe
Separate the florets from the broccoli and finely chop with a knife.
In a large bowl place the chopped broccoli , quinoa , whole egg, chopped garlic, mustard and grated cheese. Salt lightly and season with freshly ground pepper.
Mix everything well. Preheat the oven to 180 °.
Fill mini muffin cups and tamp lightly with the back of a spoon.
Bake 20 minutes at 180 °.
During cooking, prepare the sauce by mixing together the Greek yogurt, chives, lemon juice and lemon zest and season with salt and pepper.
Reserve in the refrigerator.
Place the bites on a pretty board and serve with the lemon sauce.
