Cult, the croque-monsieur , this very typical Frenchie bistro dish is modernized with seasonal vegetables . A safe bet for healthy eating, but also too good.
Recipe for 4 people.
PREPARATION :
- The bread : preheat your oven to 220 ° C. Place the slices of sandwich bread on a baking sheet, trying not to overlap too much.
- Suggestion: for an even more delicious and crispy bread, pour a drizzle of olive oil on the slices or brush them with olive oil using a brush.
- Bake for 5 minutes until the slices are golden.
- Tip: Do you have any pickles left ? You can keep them for a few days in the refrigerator and use them to season a salad or as an accompaniment to meat for example.
- Peel and slice the red onion . Place it in a small saucepan with the vinegar (white for example) and add water to just cover it. Bring to a boil then cook for 7 minutes over medium heat.
- Once ready, drain the pickles.
- Leek : cut and remove the base and the end of the leek's green (the damaged and dry part only). Cut it in half lengthwise and rinse it thoroughly. Slice it.
- In a sauté pan, heat a drizzle of cooking oil over medium to high heat.
- Sauté the leek for 7 min until tender. Salt and pepper.
- Halfway through cooking, add a little water and cover to speed up cooking.
- Assembly: cut into thin slices or grate the cheddar .
- Divide the leek, cheddar cheese and red onion pickles on the slices of bread.
- Bake again for 2 to 3 minutes until the cheddar is melted and the sandwiches are heated through.
- The salad : rinse and drain the spinach leaves . When sitting at the table, season it with a drizzle of olive oil and vinegar.
- Salt and pepper. Serve your leek and cheddar croque-monsieurs with the salad.
