Ingredients to shop for

For 4 people :

  • 4 sea bream fillets (skinless)
  • 2 limes
  • 6 passion fruits
  • 12 cl of olive oil
  • Fleur de sel
  • Freshly ground pepper
 

The recipe

  1. Cut the sea bream fillets into very thin slices and arrange them on a dish.
  2. Grate the zest of one lime into a bowl and set aside. Squeeze the juice from the two limes and put it in another bowl.
  3. Cut the passion fruits in half and scoop out the flesh with a spoon. Put it in the bowl with the lime juice and add the olive oil. Season with salt and pepper, then pour over the sea bream carpaccio. Refrigerate for 30 minutes.
  4. Arrange the carpaccio on 4 plates, sprinkle with grated lime zest, and a little fleur de sel.
  5. Chef’s tip : To firm up the fish and make it easier to slice, simply place the fillets in the freezer for 15 minutes.
