Are you addicted to the famous Vietnamese sandwich, the banh mi ? No need to run to street food corners to feast. Composed of a baguette, spicy mayo, raw vegetables and fish, you will be jubilant by reproducing this easy and stylish recipe.

PREPARATION:
The vegetables :
Grate the carrot with a large grid then cut the white onion and the cucumber into thin slices and leave to marinate in a bowl for 1 hour in the water , sugar , salt and vinegar mixture .
The marinade of the fish:
In a salad bowl, mix the olive oil and honey . Add the fish fillets and leave to marinate for 1 hour in the fridge.
Cooking the fish:
Drain the fish and reserve the marinade. In a pan, brown the skate wings for 2 minutes on each side in a drizzle of olive oil . Add the marinade, it will reduce with cooking.
Coat the fish with it throughout cooking (about 5 minutes).
The preparation of the sandwich:
Cut the baguette into two sandwiches. On the bottom slice, spread 1 tablespoon of mayonnaise , 1 teaspoon of Sriracha sauce and 1 teaspoon of soy sauce for each sandwich.
The assembly of the sandwich:
Drain your vegetables , crumble your fish and sprinkle it with a drizzle of lime juice . Start filling your sandwiches .
Put a few salad leaves on the mayonnaise , then the mint leaves . Garnish with fish , vegetables and leafy coriander .
Variation: You can adapt this recipe to small aperitif toasts, you will impress your guests with these super original tapas.
