Pristine: A Bistro That Packs a Punch!

Right in the Heart of the 9th, This Bistro is All About Good Vibes and Great Food! In their first Parisian restaurant, Pristine, chef Jérémy Grosdidier—formerly of Ducasse's Jules Verne—and Michelle Primc, who has overseen several restaurants in Luxembourg, serve up vibrant dishes that will brighten your day. The young couple is all about hyper-local sourcing, and the results are truly delicious.

 

The Vibe

"We wanted to create a place with good taste and good sense, without pretension," say Michelle and Jérémy, the duo behind this charming bistro. Their commitment to sustainability has earned them three stars from the Écotable label. They're passionate about seasonal, local produce—even the quirky and misshapen ones. Jérémy Grosdidier smokes, infuses, and liquefies these unconventional ingredients to create bold, unforgettable dishes. Although Pristine has a strong focus on vegetables, there's also a selection of meticulously sourced meats and fish on the menu.

 

Atmosphere, Atmosphere

Pristine embraces authenticity, with a rustic, minimalist decor that features exposed stone walls, a wooden counter, vintage chairs, an open kitchen in the back, and a few outdoor tables. It's a laid-back, homey vibe with friendly and attentive service. We loved that they start you off with a small plate of their whipped and lightly smoked butter, served with divine slices of bread. It’s the perfect way to whet your appetite as you browse the menu and wait for your dishes.

 

Brilliantly Crafted Bistronomy

The prices are friendly, too, with a three-course lunch menu at 28€ that will leave you beaming with joy. On our visit, we dove into the star of the menu: a delectable mushroom tart with tonka bean cream and roasted hazelnuts—absolutely irresistible. Following that, we shared the burnt "ugly" carrots, topped with a buckwheat cream, a poached egg, and tahini—it was stunning! Next came a cereal-crusted chicken dish with Swiss chard and a reimagined cacio e pepe sauce—pure comfort food. To end on a sweet note, we savored the ice cream sandwich with brown butter and honey, a heavenly treat that ensured we’d be back soon.
