The surprising recipe for miso butter oysters

Because the beautiful season isn't over yet, the Do It Team presents you today with an ultra-fancy recipe for oysters to cook... on the BBQ (or on the grill, that works too). This version with miso butter and black mushrooms, as simple as can be, just might become your new favorite appetizer. We're sharing the secrets of this curious recipe right here.

 

Ingredients to shop

For 4 people :

  • 12 Ostra Regal Oysters No. 1-2

For the topping :

  • 3 tablespoons of softened unsalted butter
  • 2 teaspoons of miso
  • 1/2 teaspoon of wasabi
  • 2 tablespoons of rehydrated black mushrooms, sliced into thin strips
  • 1 teaspoon of sesame oil
  • 1 teaspoon of mirin
  • 2 tablespoons of finely chopped tarragon

For broiling :

  • 2 tablespoons of Panko breadcrumbs

For presentation :

  • Toasted sesame seeds
  • Yarrow flowers
  • Tarragon leaves
 

Recipe

In a small bowl, mash the butter with a flexible spatula. Add the miso, wasabi, sesame oil, and mirin. Mix until the mixture has a smooth consistency. Open the oysters and discard the first water. Place about 1 to 2 teaspoons of the butter mixture on each oyster. Top with breadcrumbs.

Place the topped oysters on the grill of your covered BBQ (check every 2 minutes) until the oysters have slightly puffed up and the breadcrumbs are golden.

Garnish with yarrow flowers, tarragon leaves, and toasted sesame seeds. Serve immediately.

Tip : Prepare the topping the day before and store it in the refrigerator. The oysters will be easier to garnish once opened.
