When asked if he will soon reign over the entire Rue Rambuteau, Moïse Sfez laughs and says, “Soon, soon!” It must be said that the king of street food is on his third establishment here, after delighting the trendy Marais crowd with his lobster rolls (Homer Lobster) and pastrami sandwiches (Janet). His latest gamble: another American inspiration, the New York coffee shop, decked out in green and white, echoing the elegant vibes of iconic Big Apple spots like Sadelle’s and the legendary Ralph’s Coffee by Ralph Lauren. The twist? Maurice focuses on grab-and-go breakfast, lunch, and snacks, though a tiny counter and a terrace table are available for those who prefer to enjoy their coffee on-site.

The advantage of Maurice (a very French name and similar to the big boss’s first name) is the unique specialties that are hard to find in Paris, all wrapped up in stunning packaging.
