It’s party time at Maison Plisson ! The coolest and most trendy general store in Paris has invited Armand Arnal, chef of La Chassagnette (Arles) for a quick in-house residence. A unique opportunity when you know the reputation of this very discreet oven maestro fro Camarguere, rewarded with a Michelin star.
A very busy month
Faithful to his fetish product, vegetables, Armand Arnal showcases four resolutely vegetal and springtime plates, that are added to the menus of the twos Maison Plisson until the 1st of May. And since good news often comes in pairs, the restaurant of Place du Marché Saint-Honoré is not also open for dinner.
The result is an electrifying beet gaspacho with blood orange (€10), Banyuls vinegar with essential coriander oil. Crunchy green asparagus, slivers of ewe cheese and herbal condiments (€12) Glazed Saint-Gilles lamb with garlic and anchovies (€24 ). And an absolutely amazing pudding of Camargue rice with glazed fennel, citrus fruit and tonka bean (€9).
And the good news is that the chef did not come empty handed. Most of the ingredients used in his recipes are available in stores: rice from Camargue by Bernard Pujol, lamby by Emmanuel Lafaye, la Commanderie olive… You also can be a chef!
