Warm the milk. Pour the baker's yeast in a large bowl and dilute with the milk. Leave to rest for 3 minutes. Add the egg + flour + sugar + salt . Knead and incorporate the 50g of soft butter piece by piece and knead for another 10 minutes.

Roll the dough into a ball. Cover with a tea towel and let rise for 1h30.

Peel the apples . Cut into quarters, remove the heart of thin slices. Cook in a skillet with the butter and lemon juice for 10 minutes over medium heat, stirring regularly so the apples are tender but not crushing. Pour into a drip tray and let cool.

Spread the dough on the floured work surface in a rectangle of approximately 30 x 40 cm. Mix the remaining soft butter with the brown sugar and cinnamon, spread the mixture over the dough, leaving a border. Arrange the apples then roll on the longest side. Cut the resulting roll into 6 rolls and place them in a rectangular baking dish, cut side up. Cover and let rise for another 30 minutes.

Meanwhile, preheat the oven to 180 ° C. Bake the rolls for about 30 minutes. Let them cool completely.

The gourmet tip? Cover them with white chocolate icing : melt 100g of white chocolate. Whisk 125g of cream cheese to soften it and add the melted white chocolate.
