We no longer present Le Grand Vacarme , the ephemeral restaurant of Sarah Mainguy which has been the buzz all summer.
It is Thomas Coupeau's turn to take over the kitchens of the Le Grand Quartier hotel for a winter residence. This time, no terrace but a gourmet squat in the winter lounge of the hotel very visible to the trendy tribes of the East side.

Bottle-fed in the kitchen in his parents' Vietnamese restaurant in La Rochelle, the young thirty-something, who cherishes street food as much as Parisian bistros, embodies the new guard of popular chefs. This is evidenced by his remarkable stint at Carbón in the Marais before setting up residencies for the popular food collective We are ONA .
Comforting cuisine and natural wines
The chef's promise? Regressive and Proustian dishes he loves to surprise his guests twister. All with local and quality products , obviously: specialty coffee from the Brûlerie de Belleville , tea from the Tea Party , bread delivered by Sain , the traditional bakery of chef Anthony Courteille installed on the Canal Saint-Martin ...
To try: the boiled egg accompanied by irresistible mouillettes revisited like grilled-cheese with Beaufort (8 €), incredible pancakes filled with soubressade and scamorza (11 €), a small salad of endives , pears, blue cheese and pop -corn (€ 7), the delicious celery , mustard and pickle pie (€ 12) or a Filet O 'Fish 2.0 tartare sauce with seaweed and old cheddar (€ 16) with house fries in deluxe sauce (€ 5).
On the sweet side, a devilishly gourmet chocolate fondant (€ 8) and a vanilla ice cream brioche infused with sweet clover to die for (€ 8)!
Note for amateurs: a menu of well-known natural wines and pét 'nat' at reasonable prices, as well as the small menu of sharp cocktails . Yum: the Mexican Mule (€ 14).
