The dream team of the Experimental has taken over the reins of this 5-star establishment planted in the very heart of the Marais and has set down its cool-glam’ vibe on every floor. A cozy, chic, and stylish refuge
The architect Tristan Auer (L’Hôtel de Crillon, Les Bains), who had orchestrated the previous decor, has completely revised his copy to give the Experimental Marais a new breath of life. The inspiration? A meeting between Paris and New York, where stained glass, arches, and spectacular volumes define a neo-Gothic decor that is truly successful. A beautiful traveling soul is imprinted on the floors through objects and works of art from elsewhere, along with nods to the history of the neighborhood. The highlight of this Manhattan-Marais spirit: the American Bar, dressed with an XXL leather sofa and a wooden counter where you can let the hours slip by, cocktail in hand. Around you? Beautiful people and fashionistas who are already flocking there.
The Temple & Chapon restaurant: the beating heart of the hotel
From the top of the carpeted steps, the view demands a stop in delight. In the oversized volumes of a velvety cathedral-like hall crowned with majestic chandeliers and white drapes, the Temple & Chapon restaurant asserts its desirability. 100 seats, immaculate tablecloths, soft lighting, and, the ultimate charming asset, candles. A feast for the eyes, recalling the most elegant New York tables dear to the Experimental team. In perfect harmony, the cuisine bridges French and American culture with cheffe Mélanie Serre (Joël Robuchon, L’Auberge du Bassin) at the helm, who has designed a menu of refined and comforting dishes with a US twist.
A convincing socialite table
First impression when reading the menu: everything looks tempting! Our eyes roll over the lobster roll (€29), the crab cake (€24), the pâté en croûte (€19), the oysters au gratin with cheddar (€14), the pork belly (€28). That evening, we finally begin with the wisdom of a meagre carpaccio drizzled with olive oil, kumquats, and radish: delightful (€18). Then, we toast to spring by savoring the first white asparagus of the season enhanced by a creamy Maltese sauce with orange (€26). The next course is more indulgent with the filet de bœuf Rossini and its generous slice of seared foie gras: perfectly cooked (€62). And a touching sole meunière with its lemony brown butter (price according to availability). We couldn’t resist continuing on our naughty streak: what a joy to see a Banana Split on a menu again (€14)! In the end, a refreshing citrus cheesecake concluded this exhilarating dinner (€12). Verdict? Decor, dishes, service, energy: Temple & Chapon checks all the boxes of beauty and taste.
