Biodynamics is trending... and thank goodness for that! A true virtuous circle of food, it will be the centerpiece of an exceptional gastronomic experience at Gordon Ramsay at Trianon, the Michelin-starred restaurant at the Waldorf Astoria - Trianon Palace in Versailles. This unique dinner on December 4th will bring together a five-star cast: Gerard Bertrand, a biodynamic wine producer, and Anthony Haffner, Master Sommelier, are launching a new wine selection integrated into the restaurant's menu, which will be paired with this special menu created by chefs Gabriele Ravasio and Eddie Benghanem.

An exceptional menu: the menu will feature products from Gerard Bertrand’s biodynamic production. We start with a scallop carpaccio, Prunier Osciètre caviar, and yuzu, followed by pumpkin pappardelle with truffle cream. The main course is a magnificent Mallard duck with a Milanese cabbage pie. For dessert, enjoy tangy winter fruits and candied kumquat. Of course, this biodynamic meal is perfectly in sync with the lunar calendar.

For refined palates seeking a royal evening this holiday season, Hôtel de Crillon, A Rosewood Hotel pulls out all the stops with its Louis XIII Dinner, a banquet fit for kings imagined by the culinary dream team of Boris Campanella (Executive Chef) and Matthieu Carlin (Pastry Chef). The rendezvous? Wednesday, December 11th, for a breathtaking gastronomic experience with a majestic menu enhanced by pairings with the legendary Louis XIII cognac from Rémy Cointreau. All of this, of course, in the intimate setting of the Michelin-starred restaurant L’Écrin.

An exceptional menu: the evening begins with a delicate vegetal amuse-bouche. Then, enjoy a magnificent starter with Erquy abalone, golden brown in hazelnut butter, accompanied by a stew of barley and crowned with Madagascar Osciètre caviar. Already wowed? Wait until you taste the blue lobster from Erquy, soaked in cognac, with lobster sabayon. Next, indulge in a game pie where foie gras blends with radicchio, and a Sarthois pear, for a noble and audacious pairing. For dessert, we approach ecstasy with crispy gavottes filled with mango, passionfruit sorbet, and vanilla coconut foam. And to finish in style: a vintage cocoa chocolate, raw milk ice cream, and Louis XIII Namelaka. The dinner of a lifetime!

As part of a series of events exploring the worlds of gastronomy and the art of cocktail-making, CRAVAN, nestled in the heart of the 6th arrondissement, invites Romain Meder to take over its kitchens from December 11th to 14th, 2024. The three-Michelin-star chef, whose Domaine de Primard restaurant recently closed, offers an unprecedented culinary experience inspired by his obsession with raw materials and plant-based ingredients.

An exceptional menu: Romain Meder creates a unique menu in harmony with the venue, and especially paired with cocktails crafted by Franck Audoux, the big boss of CRAVAN, whose recipes are designed specifically to complement each dish.
