We can't get enough of Chinese dumplings! Both yummy and low in calories, we uncovered THE guo tie dumpling recipe in the Mamahuhu book written by André and Lucas, founders of our favorite restaurants Tiger Tiger and Panda Panda. Along with it, we share the authentic folding technique. Dive into the world of these divine pork dumplings, the secret recipe from André's mom, prepared devoutly for the New Year festivities. Ingredients to shop 

For approximately 20 dumplings

For the dumpling dough :

  • 300g all-purpose flour
  • 17cl water

For the filling :

    • 500g minced pork belly
    • 2 tbsp light soy sauce
    • 1 tbsp sesame oil
    • 1 tbsp Shaoxing rice wine
    • 2 tbsp finely chopped green onions
    • 1 slice of ginger (chopped)
    • 1 pinch of sugar
    • Salt and pepper
    • Chili oil
 

The recipe

  1. Prepare the dumpling dough : Pour the flour into a bowl. Add oil and water, mix with a robot or by hand until you get a homogeneous and fairly dry dough ball. Wrap the dough in plastic wrap and refrigerate.
  2. Mix all the filling ingredients by hand. Sprinkle a clean, dry work surface with flour. Cut the dumpling dough into two equal parts and form two long cylinders, each about 5cm in diameter. Cut them into small portions of about 15g.
  3. Use a rolling pin to roll the portions into circles of 6-7 cm in diameter, very thinly.
  4. Begin folding :

   - Place the dough disc flat in one of your hands and add about 25g of filling in the center with a spoon.

   - Make the first fold by pinching the dough between your thumb and index finger.

   - Similarly, make a second fold by folding the dough next to the first one. Pinch the folded dough to start closing the dumpling.

   - Repeat this process about ten times to completely close the dumpling. You should have a dumpling with pleats on one side and smooth on the other.

  1. Heat vegetable oil in a large pan, then grill the dumplings for 1-2 minutes over medium heat until the bottom is golden brown. Reduce the heat, pour a little boiling water into the pan, cover until it completely evaporates. Remove the cover and grill the dumplings for a few more minutes over medium heat.
  2. Serve with dumpling sauce.

Chef's tip : Prepare a large batch of dumplings and freeze them for a quick and convenient meal on lazy evenings.
