When two historic houses, aka À La Mère de Famille and Stohrer, team up for Epiphany, it’s simply a promise of a galette playing in the premier league. On the menu of this ultra-chic collaboration: a golden, crispy puff pastry enclosing a creamy frangipane enriched with almond cream perfectly paired with hazelnut paste and homemade praline. And because no detail is overlooked, caramelized hazelnut pieces and dark chocolate chips crown it all.

Benoît Castel, our favorite baker, elevates Epiphany with a 2024 collection celebrating tradition. His traditional galette? A pure masterpiece: perfectly crispy inverted puff pastry, 100% AOP butter, and a delightfully creamy frangipane enhanced with highly addictive Madagascar vanilla.

This galette highlights the power of citrus and the sweetness of honey, all wrapped in an airy puff pastry for a refined experience. For purists, Le Bristol also offers the baker’s galette with frangipane, full of surprises. For Cheval Blanc, the most luxurious 5-star hotel in Paris, Maxime Frédéric presents this year a true gourmet symphony. With its galette des rois shaped like a rosebud, the chef takes us back to his childhood, marked by delicacy and balance. The galette features Norman butter puff pastry dusted with brown sugar, an almond frangipane center, all subtly enhanced with a hint of orange blossom to soften the flavors.

So, when we heard about the first galette des rois from La Manufacture de Biscuit Alain Ducasse, it seemed impossible not to try it! Indulgence takes center stage in this brand-new creation, featuring a perfectly golden inverted puff pastry filled with frangipane cream and shelled, roasted almonds, offering a unique taste with every bite.

Chef Etienne Leroy, named best pastry chef in the world in 2017, has created a signature galette as the jewel of Lenôtre’s Epiphany collection. With a crispy puff pastry adorned with the signature wheat grain motif of the house, it contains a slice of panettone soaked in citrus, a fragrant frangipane cream, and a delicious orange confit. The best part? An almond crunch topped with a slice of candied orange crowns the whole creation.

Yannick Alléno and Aurélien Rivoire invite us this season with their two new Epiphany galette creations for orange lovers: their sublime Galette des Reines paired with the Tablette des Rois. This soft, cloud-like mixture is dusted with a crispy corn crunch that will surprise you with every bite.

Butterfly Pâtisserie

Chef Matthieu Carlin is back in the galette game at his Butterfly Pâtisserie, the tearoom at Hôtel de Crillon. His ultra-frangipane galette is packed with almonds, vanilla aromas, and tonka beans. At the center of the almond crown that adorns the galette is a beautiful butterfly motif. The galette is accompanied by an incredible jar of salted butter caramel with vanilla tonka for an extra dose of happiness.

The king of macarons has struck again, lighting up the early days of 2025 with its incredible Couronne des Rois. This year, Ladurée offers a galette des rois in the form of a crown. Our favorite: the Couronne des Rois with apple, featuring an ultra-light puffed brioche, almond-hazelnut-buckwheat cream, oven-baked apples drizzled with caramel, and toasted buckwheat seeds. Warning: a 100% addictive taste.
