Peel the mandarins and cut them into thin transverse slices.
Pour the vinegar, olive oil, salt, pepper and ¼ cup of the mandarin slices in a blender. Cover and mix.
Place the spinach , onion and mint in a large bowl. Mix with the
half the tangerine vinaigrette.
Serve the seasoned salad on individual plates. Arrange the rest of the mandarin slices on top.
Sprinkle with goat cheese and pistachios . Drizzle with the rest of the vinaigrette or present it separately.
