The healthy and healthy brunch that has it all

How do you rhyme a good comforting brunch with the healthy aspirations of the moment? Phew: the culinary stylist Noémie Bourrié , author of the book Food Moods , combines the useful and the pleasant with this healthy and too good brunch.

Between friends, with the kids or in bed in front of a good series: you will love your Sunday. Go!

The list of ingredients and products to pick up at the market

For the waffles:

A waffle iron

300 g sweet potato cut into large cubes

Spices to your liking (curry, paprika, garlic powder, nutmeg, etc.)

2 eggs

100g of flour

A little sunflower oil for the waffle maker

 

For the smoothie

1 banana, sliced

1 peeled kiwi

Juice of 1 lime

1/2 tsp. c. green spirulina powder (optional)

10 cl of water, or more according to the desired consistency

How to prepare healthy sweet potato waffles?

Cook the sweet potato in boiling water for 10 to 15 minutes, until tender. When the sweet potato is cooked, drain it and mash it.

Put the puree in a salad bowl, add the spices of your choice, then the eggs and the

flour .

Mix until a homogeneous paste is obtained.

Place the dough in the waffle iron, lightly oiled.

Let the waffles cook for a good 15 minutes. They will not suffer from overtime

cooking, quite the contrary. On the other hand, removing them too soon may complicate their exit from the waffle maker. The longer, the better.*

As with pancakes, baking the first waffle is rarely a success. Don't be discouraged, however, the second cooking will be perfect ;) For the garnish, treat yourself: mashed avocado , soft- boiled egg , grilled peppers , feta cheese , smoked salmon ... Anything is possible!

How to prepare the green smoothie?

Whatever the option, put the ingredients in the blender for a few seconds and enjoy immediately.
